I want to present you with the frozen yogurt popsicle,
The one and only refreshing thing you will need this summer!
And I am not talking about coke…..
It is healthy! Without any sugar, refined or else.
Those who know me, know that if it’s not tasty
it will not enter this blog, period.
So, how do you create something sweet without sugar?
You use stevia.
But stevia has mostly an unpleasant after taste,
Which most do not like, including me…
There is a nice trick I found.
When I use stevia with sour sweets it loses its after taste,
And frozen yogurt must be sour!

Because this one is tasty, healthy, vegan, paleo, and totally guiltless!
You can gobble up even four if wish to. ?
- 2 cups of coconut cream
- 1/4-3/8 cups of freshly squeezed lemon juice
- 1/2 tsp turmeric powder (for the lemony color, this is optional, no taste is detected at this small amount)
- 1 cup of frozen berries (or any other fruit of choice)
- Stevia a few drops, this changes according to you taste preference and the kind of stevia you use. I use this brand, found it the tastiest.
Mix the coconut cream together with the lemon juice, turmeric, and stevia. Taste.
Add lemon or stevia according to your preference. Just remember, somehow when we freeze food it always seems a bit less sweet than when it is in room temperature, so adjust accordingly.
Happy with the result? Good
Put some fruit in the popsicle molds, add some of the mixture, fruit, mixture to the top.
Fancy a cool chocolate shell over the popsicle?
Mix up some coconut oil with maple and cacao powder
and dip your popsicles in this.
The mixture will harden with the touch of the frozen popsicle.
