so they could help me taste them…
They have this special perfect balance of salty and sweet.
They feel like a treat but are comfortably filling.
And you can always play with the amount of sugar added.
I looked for the perfect chocolate chip cookie recipe and found this.
I adapted it to be gluten-free, and changed it quite a bit.
You can use 60% cacao chocolate or even 100% cacao chocolate bar,
For the brave ones amongst you who crave the cacao’s strong taste.
This version here is gluten-free but they do contain eggs and butter.
I tried eggless cookies and
tried substituting the butter with coconut oil.
The eggless version turns out a bit crumbly.
The coconut oil cookies are denser. than the butter cookies.
I also substituted the cane sugar for coconut sugar,
Which is lightly less sweet.
I love playing around with adding different spices and adding nuts and stuff.
Here are some versions I tried (adding to the cookie batter):
1 table spoon of – Cinnamon or matcha or ground coffee.
½ cup of – Hazelnuts or walnuts or pistachio or pecans.
All are amazing.
